The carob tree is considered a medicinal plant for its many benefits. It is produced in large quantities on Peru’s north coast (Tumbes, Piura, Lambayeque and La Libertad), but it is also founded in other countries. The tree is used as wood, the leaves as food for animals. It can also be used in the form of flour, as a great food. Algarrobina is a thick liquid with a dark color, slightly with a sweet taste, with recognized nutritional properties. To obtain it, the ripe fruits of the carob tree must be boiled, where all the natural sugars of this product are going to be concentrated, and then they are pressed. When this is done, an extract is obtained that must be filtered and evaporated, in this way a fairly viscous and somewhat thick substance is obtained.
