The olive is a tree belonging to the Oleacea family, from the Mediterranean area, with a dry subtropical climate, very well adapted to extreme environmental conditions. Its cultivation is very old, dating from Mesopotamia, around 1900 BC. Olive oil is a highly energetic food, it provides 9kcal/g from its fatty acids, of which oleic acid represents about 70% and is therefore considered a monounsaturated fat.
